This apricot strawberry mocktail is simple and refreshing, and the perfect way to celebrate an anniversary or other special occasion while pregnant!

Tomorrow is our three year anniversary – I can’t believe how time flies, especially with being in our new home and having so many projects to keep ourselves occupied! Love you, babe!
We will be celebrating tomorrow night with dinner out at a local steakhouse, but today I’m celebrating here on the blog with these mocktails! Since baby bump, of course!
I have to say, during the first trimester there was never a moment I missed having that glass of wine with dinner or cocktail out at a restaurant, but now that I’m feeling a lot better, I miss my vino! For now, sparkling grape juice and sparkling apple cider is doing the trick, as are fancy mocktails like this easy-to-prepare apricot strawberry mocktail.

I took strawberries and mint and muddle them together before topping off with apricot nectar and my favorite sparkling club soda. If you’re looking to make this an alcoholic beverage, you can sub out the club soda for some champagne or even sparkling rosé – perfect for the summer!

Apricot Strawberry Mocktail
This apricot strawberry mocktail is simple and refreshing, and the perfect way to celebrate an anniversary or other special occasion while pregnant!
Ingredients
- Fresh strawberries stems removed and sliced
- Fresh mint leaves
- Apricot nectar
- Your favorite club soda can substitute for champagne or sparkling rosé if desired!
Instructions

Muddle 1-2 slices of fresh strawberry in the bottom of a champagne glass with some mint. Fill the glass about 3/4 of the way with apricot nectar, then top with club soda (or champagne or sparkling rosé!). Garnish with extra strawberry slices and mint.
I going to say this apricot strawberry mocktail with a twist of champagne is not from this world. I m going to try this recipe. Do you know Champagne was first discovered by English chemist Christopher Merrett and decades before the drink was finally commercialized? Dom Perignon disliked the bubbles as did Louis XIV, who felt they were imperfections in the wine!
