I have a secret. Basically, it’s something that I’m crazy addicted to. Like a can’t-live-without-them-in-my-life addiction, or a might-sell-my-firstborn-child-for-it-if-I-had-to addiction. It’s oven roasted beets, my friends. Especially when they are paired with such a perfect flavor combination as they are in this oven roasted beet salad with goat cheese crema and crispy (I mean CRISPY) prosciutto! I think what I love most about beets is that it is so incredibly easy to take this simple root vegetable and elevate into something insanely delicious just by wrapping them in tin foil and roasting them for an hour and a half. Not to mention that in terms of color, they’ve just about got every other vegetable beet. I mean beat.

And if there is one thing that goes hand-in-hand with beets, it’s goat cheese. I wanted to keep this recipe a little lighter, so instead of going for a warm cooked sauce made with goat cheese, I opted for a crema with added goat cheese to make it salty and tangy. It meshes beautifully with the other components of the dish.
The green component of the dish is in the baby spring greens, which are lightly tossed with a simple balsamic vinaigrette. The dish is finished with toasted walnuts as well as prosciutto, in the best way possible: I take thinly sliced prosciutto and place it on a baking sheet under the broiler for just a few minutes. It toasts up nice and crispy and you can just break it into pieces to add some dimension (and salty pork flavor 🙂 ) to the dish. Perfect! I will definitely be using that trick in recipes to come!
I would also like to note that you do not need to plate it all fancy like I did for these photos. While some of us may prefer it that way, it also tastes just as good all mixed together in a tupperware container – which is how my fiancé likes to eat this dish. Sorry babe, I had to share!

- 1 lb. beets
- 1/2 cup heavy cream
- 1/2 cup sour cream
- 2-3 oz. goat cheese, crumbled
- 3 cups baby spring greens (baby arugula, baby spinach, etc.)
- 2 tbsp. balsamic vinegar
- 2 tbsp. olive oil
- 1/2 tsp. kosher salt, plus extra to taste
- 1/2 tsp. black pepper, plus extra to taste
- 3-4 thin slices of prosciutto
- 1/2 cup walnuts, roughly chopped and lightly toasted
- Preheat oven to 400 degrees Fahrenheit. Wrap beets in tin foil and place on a baking sheet. (If the beets are smaller, wrap several together. If the beets are larger, it is better to wrap them individually.) Roast in the oven for 80-90 minutes, or until beets are tender and can be easily pierced with a fork or toothpick.
- While beets are roasting, prepare the goat cheese crema. In a medium-sized bowl, whisk together sour cream and heavy cream until combined. Crumble in the goat cheese and whisk until combined. Add salt to taste. Cover with plastic wrap and allow to sit at room temperature while beets roast.
- To a second medium-sized bowl, add spring greens. Toss with balsamic vinegar, olive oil, salt and pepper.
- When beets are finished, remove from the tin foil and allow to cool slightly.
- Turn on the broiler to high. Lightly coat a small baking sheet with nonstick cooking spray. Lay prosciutto slices on the baking sheet. Roast under the broiler for 2-3 minutes, until extra crispy. Check on them after each minute to ensure they do not burn!
- When beets have cooled slightly, remove the skin and dice into 1 inch cubes.
- To assemble dish, spread a spoonful of crema on each plate. Top with dressed spring greens and beets. Crack some of the toasted prosciutto pieces into irregular shapes and place throughout the dish. Garnish with toasted walnuts. Enjoy!

Can this be made ahead of time and served the next day?

Karen – thanks for your comment! Yes it can be made ahead of time. You can make some of the individual components (roasted beets, crema, and the vinaigrette) the night before and then assemble the day of. The things I would not do in advance: I would not crisp the prosciutto until that day, as it will lose its crispiness if refrigerated. I would not dress the greens in advance because they will become soggy – instead, toss them with the vinaigrette right before serving. In addition, take the goat cheese crema out of the fridge about 20-30 minutes before serving so it will come to room temperature. If it’s too stiff, add a splash of water and mix. Enjoy!
