Happy Monday, friends! Mondays are always the most challenging day of the week in our household. Sophie goes back to day care, Rob goes back to his busy job, and I start the week with my longest day of work. Which is nice because at least when Monday is over, that means my work days are shorter the rest of the week! However, it definitely means we need lots of simple recipes to cook on Mondays, and these honey sesame glazed chicken thighs hit the spot! So if you’re in need of this “Monday night” kinda dish, grab the recipe below!
Honey Sesame Glazed Chicken Thighs
Prep Time 40 minutes
Cook Time 25 minutes
Servings 4 servings
Ingredients
Marinade:
- 1/2 cup honey
- 1/4 cup hoisin
- 1/4 cup oyster sauce
- 1 tablespoon sesame oil
- 2 tablespoons rice wine vinegar
For chicken:
- 4 bone-in chicken thighs
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
- Toasted sesame seeds
- Green onions sliced
Instructions

Combine marinade ingredients in a medium-sized bowl and stir to combine. Add chicken thighs and marinate at room temperature for 30-60 minutes, or in the refrigerator for up to 4 hours.

Heat oven to 400 degrees Fahrenheit. Heat a cast iron skillet over medium high heat. Add olive oil and butter and melt. Remove chicken thighs from marinade, allowing excess marinade to drip off. Reserve marinade. Season with salt and pepper and cook, skin side down, in skillet for about 5-6 minutes, until skin is golden and crispy. Flip chicken thighs over and baste with reserved marinade. Transfer skillet to oven to finish cooking for 15-18 minutes, until internal temperature reaches 165 degrees Fahrenheit. Serve garnished with sesame seeds and green onions.
