Apple Lavender Pisco Sour Cocktail

Yesterday when I went to work it was 18 degrees. 18 degrees! The automatic start feature on my car might have single-handedly saved my life when I left the house that morning at 6:20am. All I could think about all day was getting home to my loving fiancé, cutie pie puppies, a beautiful home-cooked meal, and a delicious cocktail to warm me up from the inside! These apple lavender pisco sours will do just that on chilly days for you too!

By now, we all know how much I love pisco sours. I mean, for real: pisco is definitely my go to liquor right now, mainly because I had never had it before last year! It has such a unique flavor profile and makes for some pretty fancy-tasting cocktails. Here I have paired it with hearty apples in the form of apple cider and apple slices for garnish. A floral note is added with the lavender simple syrup, which perfectly plays off the apple’s fruitiness.

Ingredients
  1. 1 1/2 oz. Pisco (a grape spirit)
  2. 1/2 oz. apple cider or apple juice
  3. 1/2 oz. lavender simple syrup (recipe below)
  4. 1/2 oz. lemon juice
  5. 1 egg white
  6. 1-2 dashes Angostura bitters
  7. 1 sprig lavender, for garnish (optional)
For lavender syrup
  1. 1 cup water
  2. 1 cup white sugar
  3. 4 tbsp. fresh or dried lavender flowers
  4. 1 drop violet food coloring (optional)
To make lavender simple syrup
  1. Combine water and sugar in a small saucepan over medium heat. Stir until the sugar has dissolved. Remove from the heat and add the lavender flowers. Cover the saucepan and allow to steep for 10 minutes. Remove lavender and strain syrup into an airtight bottle or container for storage. Add a drop of violet food coloring, if desired. Chill in the refrigerator before use.
For cocktail
  1. Fill a champagne coupe with ice and cold water. Set aside.
  2. Fill a cocktail shaker with ice. Combine Pisco, apple cider, lavender simple syrup, lemon juice, and egg white in a shaker. Replace the lid of the shaker and shake for 30-45 seconds. Empty the ice water from the champagne coupe. Strain the contents of the cocktail shaker into the chilled champagne coupe. Add 1-2 dashes of bitters to the drink. Garnish with lavender sprig and serve.
