Ingredients
6hard-boiled eggs
1/4cupmayonnaise
1/2teaspoonlemon zest
2teaspoonsfresh lemon juice
2tablespoonschopped capers
1green onionminced
1-2ouncessmoked salmon
2tablespoonschivesminced
Instructions
Slice hard-boiled eggs in half lengthwise (I like to wipe my knife clean in between each one). Carefully scoop out the cooked yolks into a mixing bowl and set whites aside on a tray or plate. To yolks, add mayonnaise, lemon zest, lemon juice, capers, and green onion. Mash and mix until well combined with a fork. You can also transfer to a food processor if you prefer a smoother texture.
Once mixture is combined, use a small spoon to scoop one tablespoon into each empty egg white half. Top each deviled egg with a small piece of smoked salmon and minced chives.
