Earlier this week I received a packet in the mail of the usual paperwork I need to fill out for my taxes. Ugh! It’s that season. It’s the worst, amiright? Now let’s talk about this beauty. This beauty of a gin cocktail! I love gin, although I know it’s not for everyone. My husband, in fact, is one of these non-gin lovers. I can’t figure out why anyone would dislike such a beautifully fragrant and unique liquor so much, but it is what it is, I suppose. If you are also one of these non-lovers of gin, this cocktail would be delicious with vodka too!

I feel that tarragon is similar to oregano: a delicious herb that is totally under-rated. Here I use it for flavor in the homemade tarragon simple syrup, and then again as a fragrant and beautifully green garnish. This tasty simple syrup is paired with grapefruit juice, which gives a nice tart and bitter contrast to the floral notes in the gin. The cocktail is finished off with a little bubbly tonic and ready to serve!

Serves 1
This tasty grapefruit gin cocktail features fresh tarragon, tart grapefruit juice, and gin.

For simple syrup
  1. ¼ cup white sugar
  2. ¼ cup water
  3. 2 sprigs tarragon
For cocktail
  1. 1 ½ ounces gin
  2. 1 ounce fresh grapefruit juice
  3. ½ ounce tarragon simple syrup
  4. Tonic water
  5. tarragon sprig for garnish
For simple syrup
  1. In a small saucepan over medium heat, combine white sugar, water and tarragon. Allow to simmer, stirring occasionally, until sugar is fully dissolved. Remove from heat and cover with lid. Allow to steep for 10 minutes before straining into an airtight container (such as a mason jar). Allow to cool fully before use. Store in refrigerator for up to 4-6 weeks.
For cocktail
  1. Combine gin, grapefruit juice, and simple syrup in a shaker filled with ice and shake for about 25-30 seconds. Strain into a rocks glass filled with ice. Top with tonic water and garnish with an extra tarragon sprig. Enjoy!
