Spicy Grilled Shrimp with Avocado Dipping Sauce

Simple summer grilling is the key to a great time, and I’ve got just the dish for you! My recipe for spicy grilled shrimp paired with a creamy avocado sauce is perfect for weeknight grilling and comes together in just over half an hour!

I don’t know about you, but it has been hot hot HOT here in Michigan! And when it’s hot, and the idea of turning on the oven or stove to make dinner inside seems like too much to bear, it’s time to take the cooking outside! To the grill, I say!

These shrimps are so tasty. Like… I could eat them all myself tasty. They are first marinated in a deliciously refreshing mixture of yummy Asian flavors, including lime juice, Sriracha, sesame oil, fish sauce, and rice vinegar. These all come together in a beautifully spicy and fragrant marinade and let me tell you – the shrimp soak it right up!

Have your hubby throw those babies on the grill while you whip up this super simple avocado sauce. I love this dipping sauce because it helps to cool down some of those spicy Sriracha notes from the shrimp marinade. It’s also super healthy for you because it’s mostly avocado (yay!) and Greek yogurt (double yay!), with of course a bit of lime juice and cilantro thrown in for good measure!

Spicy Grilled Shrimp with Avocado Dipping Sauce

These spicy grilled shrimp are paired with a creamy avocado and Greek yogurt dipping sauce. They make a great, easy weeknight meal and are ready in just 35 minutes!

For marinade
  1. ¼ cup fresh lime juice
  2. 2 tbsp. Sriracha
  3. 1 tsp. brown sugar
  4. 1 tbsp. rice vinegar
  5. 1 tsp. sesame oil
  6. ¼ tsp. fish sauce
  7. ¼ cup cilantro, roughly chopped
  8. 1 lb. large peeled, deveined, tail on shrimp (the 21-25 count size)
  9. Salt
  10. White pepper
For sauce
  1. ½ cup Greek yogurt
  2. 2 avocados, pit and skin removed
  3. 3 tbsp. lime juice
  4. ¼ cup cilantro
  5. 1 tsp. kosher salt
Special equipment
  1. Bamboo skewers (or other skewers for grilling)
Instructions
  1. If using wooden bamboo skewers, fill a large shallow dish with about 1/4 inch water and place skewers in the water to soak for at least 30 minutes before cooking.
  2. In a small bowl, whisk together ingredients for marinade. To a large plastic Ziploc bag, add shrimp and marinade. Close bag and gently toss to coat. Allow to marinade for at least 30 minutes, or longer (place in fridge if marinating for longer than 30 minutes).
  3. Meanwhile, add ingredients for dipping sauce to a food processor and pulse until sauce is creamy. Transfer to small serving bowl.
  4. When shrimp have marinated, skewer about 5-6 shrimp per bamboo skewer. Season lightly with salt and white pepper on both sides. Grill over a high charcoal grill for about 2 minutes per side, until the shrimp have curled nicely into a "C" shape. Remove from grill and serve shrimp with dipping sauce. Enjoy!
