Happy Monday, friends! With all that’s been going on lately, I wanted to bring you guys a nice light recipe that will have you dreaming of spring, which hopefully won’t be too far off for us here in Michigan! These spring deviled eggs are simple and tasty, and the perfect recipe to bring to your family’s Easter or Mothers Day gathering!

I wanted them to be light, bright and fresh, and so I packed them with tasty green onions and lemon, and topped them with luscious smoked salmon and fresh chives. Enjoy!

Simple Spring Deviled Eggs

Celebrate the season with my simple spring deviled eggs! These tasty bites feature all the freshest flavors and are topped with smoked salmon!

Servings 12 eggs

Ingredients

  • 6 hard-boiled eggs
  • 1/4 cup mayonnaise
  • 1/2 teaspoon lemon zest
  • 2 teaspoons fresh lemon juice
  • 2 tablespoons chopped capers
  • 1 green onion minced
  • 1-2 ounces smoked salmon
  • 2 tablespoons chives minced

Instructions

  1. Slice hard-boiled eggs in half lengthwise (I like to wipe my knife clean in between each one). Carefully scoop out the cooked yolks into a mixing bowl and set whites aside on a tray or plate. To yolks, add mayonnaise, lemon zest, lemon juice, capers, and green onion. Mash and mix until well combined with a fork. You can also transfer to a food processor if you prefer a smoother texture.
  2. Once mixture is combined, use a small spoon to scoop one tablespoon into each empty egg white half. Top each deviled egg with a small piece of smoked salmon and minced chives.
