Grilled Cherry Tomato and Basil Crostini

I love a classic flavor combination, and these grilled cherry tomato and basil crostini with tangy balsamic glaze and creamy burrata cheese really hit the spot! They are especially perfect for a relaxing, rustic dinner party.

Hors d’oeuvres are the perfect way to set the tone for your next dinner party. And using a classic flavor combination like cherry tomatoes, balsamic, basil and mozzarella is bound to make everyone happy. I love this recipe because it takes this traditional palate of flavors and elevates it with the use of burrata cheese instead of regular mozzarella (read all about my love of burrata cheese here!). Additionally, it captures this combination of ingredients in a cute, two-bite hors d’oeuvres that sets a rustic and casual tone for company.

In this recipe, you can use a grill pan to roast the cherry tomatoes, so it’s much simpler than pulling out the charcoal and the lighter, which I love. The grilled cherry tomatoes are simply tossed with olive oil, salt and pepper and then piled on crostini topped with whipped burrata cheese. Fresh basil and a thick balsamic glaze complete this yummy dish!

Grilled Cherry Tomato Salad Crostini with Whipped Burrata, Fresh Basil, and Balsamic Glaze

Ingredients
  1. 2 pints cherry tomatoes, quartered
  2. 1 tbsp. olive oil
  3. 1/4 tsp. salt
  4. 1/4 tsp. black pepper
  5. 8 oz. burrata
  6. 1/4 tsp. salt
  7. 1 baguette, sliced thinly on a diagonal (about 14-16 crostini)
  8. 2 cloves garlic, minced and mashed into a paste
  9. 4 tbsp. olive oil
  10. 14-16 basil leaves, whole
  11. Balsamic glaze*
Instructions
  1. Preheat a grill pan or a grill to medium heat.
  2. In a large bowl, toss cherry tomatoes with olive oil, salt and pepper. Grill in a grill pan over medium heat until slightly charred, about 10-12 minutes. Remove from heat.
  3. Meanwhile, add burrata cheese and salt to a stand mixer fitted with a whisk attachment. Whip on medium speed until light and fluffy. Set aside.
  4. Preheat broiler. Place crostini on a sheet tray. In a small bowl, whisk the mashed garlic and olive oil together. Drizzle over the bread and toast under the broiler until golden brown.
  5. To assemble, smear burrata cheese on the toasted crostini. Top each crostini with 1 basil leave and a spoonful of cherry tomatoes. Drizzle balsamic glaze over each crostini and serve.
Notes
  1. *If you do not have balsamic glaze, make your own by reducing balsamic vinegar in a saucepan over low-medium heat until it is thick enough to coat the back of a spoon.
