Five Easy Fall Weeknight Dinners

Fall is all about comfort food, and today I’m sharing my favorite fall weeknight dinners that are on the table in under an hour!

This is my favvvvorite season for comfort food, y’all! When the weather starts to turn, and the leaves are a glorious mixture of yellows, oranges and reds, and you can pretty much smell autumn in the air. It’s the perfect time for comfort food, but I still don’t want to be slaving away in the kitchen for hours after work! That’s why today I’ve compiled in one easy place my top five fall weeknight dinners for you: add all these to the grocery list next weekend and you’ll be ready and prepped for the whole week! These are tasty, comforting, and ready in one hour or less, so you can enjoy all the beautiful fall foliage and cozying up next to the fire with your loved ones!

Mom’s Chickey Chicken Pasta

What to prep on Sunday: defrost and cube your chicken breasts!

Spinach Mushroom Enchiladas

What to prep on Sunday: Prep your chimichurri sauce and save in airtight container in the fridge. If you want to be really ahead of the game, you can prep the entire enchiladas dish up until you cover it with tin foil, then pop in the fridge. The night you want to cook it, take it out about 20-30 minutes beforehand (while you preheat the oven!) and cook away!

Creamy Chicken Ramen Casserole

What to prep on Sunday: The chicken and vegetable mise en place can be prepped ahead, or you could alternatively prep the whole casserole minus the chicken stock and cream. Leave that out and just pour it in before cooking the night you are having it.

Meat Lovers Ratatouille

Prep ahead on Sunday: Slice all your veggies in advance! That will make preparing this dish a snap!

Creamy Ricotta Tomato Sauce with Farfalle

Prep ahead on Sunday: The sauce can be made ahead of time and refrigerated (or even frozen!). Warm gently in a saucepan prior to serving, and cook the noodles fresh for that beautiful al dente bite. You can also grill or saute some chicken breast or shrimp to top off this dinner if you aren’t a vegetarian fan!
