Okay, so I have a confession. Sometimes – some. times. – I get a little tired of bacon and eggs for breakfast. The hubs and I typically will make breakfast sandwiches or breakfast burritos on Sundays so that we have a tasty, protein-packed breakfast lined up every morning. Because let’s face it – getting out bed is hard. But sometimes I just want something sweet and refreshing and different than the usual – that’s where my pink smoothie comes into play!

I love a good smoothie, and especially a colorful one! While this smoothie doesn’t contain acai, but because of it’s beautiful bold color, it totally reminds me of days spent in Hawaii, eating acai bowls and taking in the beautiful scenery. It’s a nice early morning day dream session, that’s for sure!

These smoothies get their incredible color from a combination of strawberries and raspberries, which is muted by the addition of bananas. Bananas is always a staple in my smoothies, and you can even freeze bananas that are close to going bad to use in future smoothies – it’s the perfect way to not waste produce and also adds another icy component to your smoothie!

Probably my favorite part of this smoothie, and the part that reminds me of acai bowls in Hawaii so much, is the toppings! You could easily turn this smoothie into a smoothie bowl and add even more toppings: sliced bananas, sliced strawberries, your favorite granola – whatever your heart desires! Here I added my two favorites: chia seeds and bee pollen!

Serves 1

Ingredients
  1. 1 banana, peeled and roughly chopped
  2. 1 cup raspberries
  3. 1 cup chopped strawberries
  4. 1-2 teaspoons honey
  5. 1/4 cup apple juice
  6. 2 cups crushed ice
  7. Bee pollen, for garnish
  8. Chia seeds, for garnish
Instructions
  1. In a blender, combine banana, raspberries, strawberries, honey and apple juice. Blend on high until smooth in consistency. Add crushed ice and blend again on high until smooth. Serve garnished with bee pollen and chia seeds, if desired.
