A Late Summer Gin and Coconut Milk Cocktail

This gin and coconut milk cocktail is a party for the senses! The perfect drink for late summer, it features honey simple syrup and grapefruit juice.

Happy Wednesday, friends! It’s that slightly nostalgic time of the year when late summer begins blending into early fall. When you can pick up a PSL from your local Starbucks already, but you’re not quite sure you’re finished with those summertime iced coffees quite yet, or the taste of marshmallows roasted on a late night bonfire.

One of my favorite things about living in Michigan is the changing of the seasons. So may people gripe about our long winters, but I truly love that we get to experience all of these seasons and the gorgeous weather that can come with each one! Today’s post is an appreciation of the shortening of these long summer days, and an ode to next summer. This tasty gin cocktail is quite unique compared to cocktails I’ve shared in the past, but I’m loving how the bright gin combines with the sweetness of coconut milk!

A Gin and Coconut Milk Cocktail

Prep Time 5 minutes
Cook Time 10 minutes

Ingredients

  • 1/2 oz honey simple syrup
  • 2 ounces grapefruit juice
  • 3-5 basil leaves
  • 1 1/2 ounces gin
  • 1/2 ounce coconut milk

For honey simple syrup:

  • 1/2 cup water
  • 1/4 cup honey

Instructions

  1. In the bottom of a shaker, muddle simple syrup, grapefruit juice, and basil together. Add gin and coconut milk. Fill with ice. Shake for 25-30 seconds, then strain into a chilled cocktail glass.

To make honey simple syrup:

  1. Add water and honey to a small sauce pan over medium heat. Stir gently until honey has dissolved completely, then remove from heat. Transfer to a storage jar and allow to cool completely before use.
