As some of the quarantine restrictions are being lifted around the country, some of us will be able to reunite with family and friends over the holiday weekend, and I for one cannot wait to relax and have some tasty food and delicious cocktails! Today I wanted to share some easy-breezy pitcher cocktail recipes that you can throw together in advance for serving at your get-togethers this summer.

Strawberry Champagne Pitcher Cocktail
Prep Time 20 minutes
Servings 1 pitcher
Ingredients
- 1 bottle champagne
- 1/2 cup apricot brandy
- 1/2 cup simple syrup
- 1 bunch mint
- 2 cups strawberries sliced
- Ice
For simple syrup:
- 1/2 cup sugar
- 1/2 cup water
Instructions

To prepare simple syrup, combine sugar and water in a small saucepan over medium heat and cook, stirring occasionally, until sugar is dissolved. Remove from heat and allow to cool to room temperature before proceeding.

To prepare pitcher cocktail, combine champagne, apricot brandy, simple syrup, mint, and strawberries in a large pitcher. (You can adjust the amount of simple syrup based on your taste level, less if you prefer a less sweet cocktail, as the apricot brandy also provides some sweetness). Stir to combine, then add ice before serving and stir again.
White Wine Basil Peach Pitcher Cocktail
Prep Time 20 minutes
Servings 1 pitcher
Ingredients
- 1 750- ml bottle Sauvignon blanc
- 1/2 cup blueberry simple syrup
- 12 ounces sparkling water
- 2 peaches pitted and sliced
- 1 cup blueberries
- 1 bunch fresh basil leaves roughly torn
- Ice
For simple syrup:
- 1/2 cup sugar
- 1/2 cup water
- 1 cup blueberries
Instructions

To prepare simple syrup, combine sugar and water in a small saucepan over medium heat and cook, stirring occasionally, until sugar is dissolved. Remove from heat and add 1 cup blueberries. Steep for 10 minutes, then use the back of the spoon to press on the berries to release their juices and flavor. Strain out the berries and allow syrup to cool to room temperature before proceeding.

To prepare pitcher cocktail, combine Sauvignon blanc, blueberry simple syrup, sparkling water, peaches, blueberries, and basil in a large pitcher. Stir to combine. Add ice before serving and stir again.
Blackberry Tarragon Cabernet Pitcher Cocktail

Servings 1 pitcher
Ingredients
- 1 750- ml bottle Cabernet Sauvignon
- 1/2 cup tarragon blackberry simple syrup
- 1/2 cup Pernod
- 1 cup blackberries
- 1 bunch tarragon leaves
- Ice
For simple syrup:
- 1/2 cup sugar
- 1/2 cup water
- 1 cup blackberries
- 1/4 cup tarragon leaves
