Servings 1

Ingredients

For earl gray honey simple syrup:

  • 1 cup water
  • 1/2 cup honey
  • 2 Earl gray tea bags

For cocktail:

  • 1 egg white
  • 1 ounce gin
  • 1/2 ounce earl gray honey simple syrup
  • 2 ounces blood orange juice from about 2-3 blood oranges
  • Angostura bitters
  • Blood orange peel for garnish (optional)

Instructions

To make simple syrup:

  1. Combine water and honey in a small saucepan over medium heat. Stir occasionally and heat until the honey has dissolved. Turn off the heat. Add tea bags and allow to steep for 15 minutes. Remove tea bags and allow simple syrup to cool before transferring to an airtight glass jar. Will keep for up to 4 weeks in the refrigerator.

To make cocktail:

  1. Add egg white to a cocktail shaker. Cover with lid and shake for about 25-30 seconds until the egg white becomes frothy. Fill shaker with ice and add gin, simple syrup, and blood orange juice. Cover with lid and shake for about 30 seconds until well combined. Strain into a chilled champagne coupe and top with bitters and blood orange peel.
