Not only do they have a beautiful color, but these creamy popsicles will rock your world with coconut lime flavor all this summer!

Boy it is so hot out there! We just got back from our amazing honeymoon on Saturday, and it is like hot HOT hot here. Much hotter than it was over in Europe so it was kind of a shocking wave of heat and humidity that hit us when we rolled our suitcases out of the airport two nights ago. And when the weather is hot, the treats should be cold! These coconut lime popsicles are just perfect!

Not only do they have a beautiful color, but these creamy popsicles will rock your world with coconut lime flavor all this summer!

I love these popsicles because they are crreeeaaammy. They get their creaminess (and beautiful coconut flavor!) from the addition of coconut milk in the popsicle liquid. I love love love how refreshing this makes the popsicles! If you don’t like crunchies in your popsicle, then I would finely chop the actual coconut in a food processor until it is a very fine powdery consistency before adding to the popsicle mixture.

To make the popsicles this adorable old-school style, I used this popsicle mold. I love the dramatic ridges down the edge of the popsicles!

Ingredients
  1. 1 can coconut milk
  2. ¼ cup milk
  3. ¼ cup lime juice, fresh squeezed
  4. 1 tbsp. lime zest
  5. ¼ cup unsweetened shredded coconut
  6. 1 drop green food coloring (optional)
Equipment
  1. 8-serving popsicle mold
Instructions
  1. In a Vitamix blender, combine coconut milk, milk, lime juice, lime zest, and shredded coconut. If desired, add 1 drop of green food coloring. Blend on high until mixture is well-combined, about 1 minute. Distribute the popsicle mixture evenly among the 8 popsicle molds. Carefully transfer popsicle mold to freezer and freeze for 10 minutes. Insert a popsicle stick into each popsicle mold and then freeze until solid, about 2-3 hours. Enjoy!

    I can’t have any citrus, what would you recommend substituting or can I just a more coconut milk to replace the liquid from the lime?

      Crystal – thanks for your comment! So you could just substitute more coconut milk, but they will just be mainly coconut popsicles then (if you’re okay with that – go for it!). I’m not how far your inability to have citrus goes, but you may be able to substitute for another kind of juice, for example, maybe pineapple juice would give you a little bit of that sour note in place of the lime juice if you are able to have that? Let me know how it turns out!

    Hi! Thanks for this very yummy recipe. We are going to try them today. We love our recipes but we love a little change as well!

    Our favourite is a simple mint and orange pop :
    I crush a whole bouquet of fresh green mint with a table spoon of honey in a blender and keep the mixture in the freezer for later use. When I need to make the popcicles, I just grate the frozen mixture into freshly sqweezed orange juice and give it a good stir before pouring into the molds.

    Here is a more sophisticated recipe : Spicy Watermelon
    Cut 1/6 of a watermelon flesh, seeded into cubes. Add a table spoon of honey, the juice and zest of a lime, along with 2 to 3 dashes of Tabasco sauce. Blend, pour, freeze and enjoy!
    While the mixture freezes, layers separate slightly so the taste varies a little as you eat it : you won’t get bored of the flavour while eating.

    Sometimes simple things make great treats : frozen milk with orgeat (almond) sirup is very refreshing and tasty.

    To make it dairy free, can I just add more coconut milk? Or what else would work?

      Hello Sara, thanks for your comment! Yes you could simply increase the amount of coconut milk, it should freeze properly still. Alternatively depending on what is in your refrigerator, you could try almond milk as well! A vanilla almond milk would give a sweeter flavor, while a regular plain almond milk would better highlight the tartness of the lime. Let me know how it turns out!
